Recipes?

Yesterday I had just the BEST time with the Bronx Bombers hunting pheasant....

And now we have some meat to eat -- does anyone have a recipe? Mom is a bit nervous to try to cook it, so any suggestions would be helpful.

I would wuff to show you photos from the day, however the tiny digital camera that mom bought for $20 at Rite aid is a PC-only camera and we have a Mac.....

...sigh...

The camera drama doesn't seem to end.

What happened to the new one we got from the Reaps?? Well mom has lost the battery charger and so she was unable to use it.

What am I going to do with her?

We had a lovely time hunting p(h)easants with you, too. Although now you understand that given the choice between flirting with girls and chasing birds, Jozsi especially has a one-track mind.

We got a couple of pheasant recipe suggestions on our blog from last Thursday. And we will have some pictures to post this evening (hopefully). Sorry your new funky camera isn't working out yet.

Hey there cooking pup!

Mario Batali recommends brining pheasant, or else it can be a bit dry. Brine is a mixture of water, salt, sugar and flavoring agents. It is often used to get moisture (through osmosis) into leaner, drier meats. Really good for T-day turkey too!

Brine:
1 C Sugar
1 C kosher salt
2 Scallions, rough chop
2 cloves garlic
1 cinnamon stick
3.5 Q water
Boil 2 C of the water and dissolve the salt and sugar, and toss in the other flavoring agents. After boiling and dissolving, take it off the heat. Add the rest of the cold water to cool the mixture down. Place the bird into the cool brine in a container or a large ziplock bag. Soak overnight but not full 24 hrs. Rinse twice before cooking.

For cooking it, it lends itself to fruit and spices, or white wine, sage and garlic.
